Burmese Chicken Curry
Posted on May 6, 2010 | 15 CommentsTweetI’ve reposted my absolute favourite curry and one of the most popular on the site. This Burmese style curry is absolutely delicious. It’s so fragrant and inviting that I can barely hold myself back from eating half the pan while i’m waiting for it to cook. On the rare occasion of there being any leftovers, It freezes brilliantly and absolutely improves with age. It’s the ultimate curry – I urge you to try this – you’ll never want another curry ever again.

Figs with Cinnamon Crumble, Pomegranate Molasses and Honey Yoghurt
Posted on January 24, 2009 | No CommentsTweet This is utterly delicious. I devised this after being given some figs and some pomegranates by Brendan as he asked to make something special. I was amazed just how successful it was. I’m pretty sure you’ll agree. The sharpness of the pomegranate and sweetness of the yoghurt together with the mellow cinnamon are a trio made in heaven. It’s one of the best desserts I’ve ever tasted! Brendan has insisted that this dish be called “Figs Jackson” in case it becomes the peach melba of the new millennium.

Cauliflower Soup with Chorizo

Chicken Saag
Posted on June 11, 2008 | 6 CommentsTweet This is the ultimate curry! I kid you not, this is a fantastic dish, absolutely packed with flavour. The crispy onions, which may seem like a complete pain in the arse to prepare, are the key ingredient I feel. They add a depth and nuttiness to the dish that is just unbelievable. It’s par for the course that this isn’t particularly healthy but I made it alongside a fat-free daal and had a smaller portion size. However, I did have two helpings which cancelled out all my good intentions. I’m so weak.

It’s like a Mediterranean version of Nachos. I’ve eaten this at Turkish restaurants in Sydney, but never made it at home. I must say that the home version is supreme! It’s a great communal dinner party dish that looks a lot more complicated than it actually is. It’s so simple to prepare and the results are fantastic! Top Tea!!!

Afghani Eggplants with Spicy Chickpeas

It uses 3 sauces combined with a hearty slice of eggplant to create something totally unlike any other dish I’d tried. It’s got influences from India and Afghanistan which makes it a very interesting blend of flavours.

Spanish Roasted Pork Ribs

There’s nothing more satisfying than working your way through a rack of pork ribs, gnawing at the tiniest morsel of meat. These Spanish ribs combine all the great flavours of sherry, paprika and wine and create something very sophisticated. Maybe too sophisticated to pick up and ravage like a buzzard.

Beetroot & Cumin Soup

Beetroot is so tasty and so full of nutrients is surprising to see it used so rarely. It’s a right old pain in the arse to deal with as it’s like cooking with paint! The colour, while amazing, just gets everywhere. It’s worth being that extra bit careful, and don’t wear anything white while cooking. It’s one of the nicest soups I’ve eaten in a long time. And it’s an original!

My Spaghetti Bolognese

Prawn, Scallop & Chorizo Paella
Posted on August 1, 2007 | 1 CommentTweet If you’re looking for a meal in one pan that’ll save a bit of washing up not to mention you panicking over a stove full of stuff, then try this paella. It’s important to stir this as little as possible if at all. The more you fiddle about with it, the more starch you’ll aggravate in the rice and the gloopier the results will be… this isn’t risotto. I imagine any old Spanish lady would rap you over the knuckles with a wooden spoon if you so much as looked like you might be thinking about stirring. Incidentally, it’s sensational!

Spanish Style Rabbit with Herbs

However, that was a long time ago and Snowy, Ginger, Diamond and Spot are all long gone so I’m sure they wouldn’t mind me scoffing their wild relatives in this lovely Spanish country stew. It’s a simple dish and dare I say, absolutely senastional. If you’re not a bunny boiler then it’ll work with chicken thighs.

Lahmaçun (Turkish Pizza)
Posted on June 30, 2007 | 1 CommentTweet Turkey’s answer to pizza is something I hadn’t experienced before I visited the place. They were ridiculously cheap there and really tasty. However, one down point was that during one hungry evening in Istanbul we settled on a restaurant that was famous for its lahmacun. When it arrived, we were half way through only to discover that there was a baked cockroach included free of charge. This addition is purely optional and won’t affect the taste if you leave it out.
