Coriander Salsa
Posted on August 28, 2010 | No CommentsTweetThis is quite a simple little dish which I made to accompany a barbecue this evening. I made it at the last minute and I’m so glad that I did. It works excellently with red meat, but also it was amazing with the boiled potatoes I also served. It packed a tasty little punch of spice too, but this can be toned up or down depending on the types of chilli you use. I used the most explosive Indian green chillis which used in moderation (ie one!) are just fine. Try it, it’s really good.

Salmon with Punched Potatoes and Lemon Oil
Posted on July 23, 2010 | 2 CommentsTweetSimple and delicious are the first two words that spring to mind with this recipe. Simple, it didn’t stretch my ability or patience levels in any way. Delicious, because it was! I love salmon anyway, but the sharp, sweet lemon oil is just perfect alongside both the fish and the potatoes. As far as the potatoes go, I have no idea why they are ‘punched’, but the Portuguese have being doing it for years so who am I to argue? It’s a great, refreshing dish for any day of the week – give it a go.

Flautas With Salsa Mexicana
Posted on May 10, 2010 | No CommentsTweetI really fancied something Latin inspired this evening. There’s something very satisfying about Latin food, and Mexican food in particular. It’s a perfect mix of insanely fattening and happily healthy – which is good for me at the minute as I need to address my eating habits. I’m not prepared to eat boring rabbit food yet I concede I can’t have everything lathered in butter and oil either. This way I get a little of both. I used to order this every time at the legendary TexMex restaurant in Edinburgh back in the day. Sadly the restaurant closed years ago but and have often randomly remembered it with fondness. The last time I ate there in particular was memorable. My mother was in town and we ordered the Flautas as a starter. For whatever reason the food took an hour to arrive, by which point the both of us were utterly off our faces on Margaritas and tequila shots. The last thing I remember is the pair of us staggering home at a 45% angle, clinging onto each other for a modicum of support. Anyway the dish is crunchy, meaty and deliciously flavoursome with every mouthful. The spicy tomato salsa is best served on the side ready to dunk a flautas into. Good times.

Eggs with Green Tomato Salsa
Posted on February 22, 2010 | No CommentsTweetI’m new to this concept, but believe me it’s a phenomenon! Spicy eggs are absolutely sublime. Here’s a really simple Latin inspired dish I ate for supper tonight (i’d skipped dinner as I’d eaten an incredibly massive lunch). I’d received the salsa as a gift (and the recipe thankfully) from a good friend, and was told it went extremely well with eggs. It really does. You should try this – for breakfast, lunch, dinner and supper!

Tuna Empanadillas
Posted on January 5, 2010 | No CommentsTweetI made this dish for a ‘bring a plate’ party I went to on New Year’s Eve. An impressive dish which looked more involved than it actually was. Empanadillas are small, bite-size pasties filled with whatever filling you see fit, then deep fried and transformed into a burst of spanish flavours. My favourite empanadas are tuna. This recipe is really simple and the results are really tasty. I made life simple for myself by buying pre made, frozen pastry but if you must make your own then off you go. I was in no mood for it. Whatever you choose, you’ll be sure to love these little emapanadillas – they were first plate cleared by the party guests. Result!

Guacamole
Posted on June 7, 2009 | No CommentsTweet I absolutely hate shop bought guacamole. It’s up there with shop bought coleslaw. I can’t believe people actually think they’re being exotic buying it. They obviously don’t realise how easy it is to make and just how much better it is when you’re done it yourself. There are many schools of thought as to what you do and don’t put into it, personally I prefer mine with a tiny hit of chilli, which is why I’ve included one in the recipe but obviously you can omit it if you don’t agree. Olé!

BBQ Lamb Marinade
Posted on January 28, 2009 | No CommentsTweet There are some days I can’t be bothered farting about in the kitchen. Today was one such day. It was a sunny, beautiful day and I wanted out of the house. So I left some lamb steaks sitting in this marinade for 5 hours while I went to the beach. When it came time to cook, I just emptied them on to the BBQ and cooked them for 10 minutes. They were delicious.

Mexican Chicken Pozole
Posted on December 18, 2008 | 2 CommentsTweet I wasn’t feeling too great today so I decided to cook something which would be substantial and healing. The spice in this dish sure sweated out of me whatever was making me feel ill. I used some pretty hot chillies as a garnish but this is really your call. It’s got a nice warmth without it but if like me, you enjoy a challenge then spice it on up. Traditionally this dish is made with pork but it tastes just as good with chicken.

Mexican Black Bean Salad

Who knows where/when I purchased them, but they have remained unused since that day. After deciding a week ago that I didn’t need to shop for at least 3 years due to the crap I’d accumulated over the months, it was decided that I would “use what I had” instead of venturing anywhere near a shop. I created a splendid Mexican feast, of which this simple salad was the surprise highlight.

Peruvain Style Baked Leeks

I really wanted to make a leek suet pudding with a bunch of leeks I’d picked up at the markets at the weekend, but when I came to do it I had no idea. I thought about ringing my mother but she’s in the UK and wouldn’t have been too impressed at answering the recipe hotline at 4am. So instead I made this. I’m not sure where the Peruvian influences are but I’m not one to question a dish. It was rather delicious I must say. The mustard really adds some depth of flavour. As for the suet pudding, I’ll be sure to get the recipe at a reasonable hour and share it with you all.

I’ll grow out of it in a week or so. In an endless quest to try every meatball known to man, I decided to try these lovely little Venezuelan treats. Apparently they are similar to a meatball eaten in Uruguay too for anyone who’s interested.

Moqueca

I didn’t even know what it was until recently when I tasted it again here in Sydney. It is a delicious fish stew from Brazil that goes by the exotic name of moqueca. The flavours are delicious. Punched Potatoes

It’s also a great way to vent your day’s anger as you literally do “punch” the potatoes. Not hard enough for my liking. We had it with some chicken and chorizo. Another triumph!

Cuban Sweetcorn & Chorizo Soup

I bought a Cuban cook book last week and although it’s more like a bloody history book than a cook book, there are some good recipes in it. This one in particular is delicious. Orgiginally a vegetarian soup, in the extensive evaluation of the meal, the book pointed out that often Chorizo sauage is often added. Who am I to argue.

Pork Chilli

I managed to find a great place here in Sydney that sells all manner of dried mexican chillies which is what makes this dish taste so good. Try with all your might to get hold of the same variety. Swordfish with Mango Salsa

A friend of mine made me a similar salsa a while back for a BBQ and I’d forgotten just how lovely it is and how well chillies go with it. Try it. This should serve 4 people.

Pozole – Mexican Pork & Hominy Stew
Posted on April 19, 2007 | No CommentsTweet If it’s raining and miserable outside and you’re stuck in the house, then you might want to give this a try. It’s a meal you have to wait for, but that wait is well worth it. This Mexican classic is absolutely mouthwateringly delicious and a real hearty meal in itself. Hominy, the key ingredient are corn kernels which have been cooked in lime (not the fruit). This removes their chewy husks and leaves only the flesh which swells up to large bean like appearance. They have a distinctive flavour which is not unlike that of a corn tortilla, not surprising as corn tortillas are made from ground hominy. They are the key to the meal so don’t leave them out or indeed substitute. It won’t work.
