    TweetHere’s a great way to serve cauliflower. I always remember it from my childhood as being slightly mushy and bland and always secretly dreaded it – I have since learned that it doesn’t need to be cooked for 55 minutes on a rapid boil (sorry mother), so a whole new cauliflower world has presented itself to me. This Spanish recipe really brings it to life. The sweetness of the dressing permeates the smooth, almost buttery texture and flavour of the cauliflower to create a much more memorable taste.     TweetI love croquetas, the Spanish version of croquettes. Lovely, crunchy and creamy treats all in one bite. It’s a shame they have such an old fashioned, 1970s reputation. As a child of the 70s maybe that’s why I’m drawn to them. I make them all the time using various fillings, but the Spanish proscuitto or jamon are my favourite. Give them a go.

    TweetFans of the site will know that I occasionally stray from the wonders of lamb and beef and anything spicy to make a cake! Yes readers – I sometimes have the urge to go Suzy homemaker and whip up something sweet. Today I made a very easy cake using one of my favourite Spanish cookbooks as inspiration. The resulting cake “was” (as that is already past tense only 5 hours later) absolutely delicious. Oranges are one of my favourite fruits and this makes great use of them – a light, fluffy citrus burst of flavour. Perfect.

It’s a fabulous tapas dish that I always order in a Spanish restaurant. Patas Bravas literally translates as ‘brave potatoes’ – this hints at the spicy tomato sauce which suggests a certain level of courage. the tomato sauce isn’t THAT spicy, but it does have a certain heat that may cause the more cowardly amongst us to run and hide.

    Pot Roast Pork with Sherry & Tarragon

    TweetI’m big into seasonal cooking. However, even after 6 years in Australia I can’t seem to get my head around the fact that January = Summer. To me January was always bitterly cold and a time for hibernation. This was reflected in the type of food I would crave and cook. Hearty and warming – a slow roast that would heat the house and fill it with delicious aromas. Sydney in January is nothing like Edinburgh in January. It’s hot, humid and often uncomfortably so. Today, the sun was not shining and it was a chilly 26ºC so out came the pot roast pan! Durning the long cooking time, the sun came out and the cicadas began to sing – just as the house heated to a temperature similar to that of the face of the sun. The resulting dish however was well worth the suffering. A meltingly tender roast which just gave up the fight and turned into one of the most delicious roasts I’ve had this side of the equator.

    TweetI made this dish for a ‘bring a plate’ party I went to on New Year’s Eve. An impressive dish which looked more involved than it actually was. Empanadillas are small, bite-size pasties filled with whatever filling you see fit, then deep fried and transformed into a burst of spanish flavours. My favourite empanadas are tuna. This recipe is really simple and the results are really tasty. I made life simple for myself by buying pre made, frozen pastry but if you must make your own then off you go. I was in no mood for it. Whatever you choose, you’ll be sure to love these little emapanadillas – they were first plate cleared by the party guests. Result!

    Tweet Torrijas is Spain’s answer to French toast. The Spanish love to eat it for breakfast (especially around Easter time) and so do I. It’s incredibly easy to make and is perfect for using up old stale bread. The bread I used was like a breeze block but after many exclamations of “this won’t work” – it proved me wrong and worked perfectly. There was nobody more amazed than me! I savoured every delicious mouthful. It was the perfect way to end my week long consumption of Spanish food, of which I do hope you’ve enjoyed!

    Tweet For this dish I changed up a delicious Spanish tomato salad and used a delicious new ingredient which is currently the “ingredient du jour”. The Kumato is essentailly a tomato with a difference. It’s dark green appearance is somewhat unusual, but it’s flavour is more familiar albeit with a more intense and sweeter hit regular tomato – just like a tomato SHOULD taste in my opinion. It’s perfect for salads as it looks great on the plate. It works perfectly with any fish – from cod to tuna. My addition of pancetta much needed salty note to this light and healthy Spanish treat.

    It’s Spanish Week!

    TweetFor no good reason, other than that I love Spanish food I decided to have a week long festival of their cuisine. For seven days I shall cook only Spanish for dinner! The idea came about with a trip to the huge Sydney Fruit & Vegetable Markets – normally I just buy all kinds of ingredients, from Asian to Mediterranean and quite often have bags full of disparate stuff that makes it harder to cook with. Being more single minded this time really paid off. I went in with the attitude of “Whatever’s cheap will dictate what I cook all week”. So with tomatoes, capsicum, chillies, zucchini and eggplant all in season a mediterranean approach stood out. Spanish food is my favourite med food so that’s what I’ll be cooking.

    Tweet I love meatballs! What can I say! There’s something so satisfying in them. I especially love the Spanish version called albondigas. I always order them in Spanish restaurants and always eat the lion’s share. So, making them at home is dangerous as I have a tendency not only to eat them from the pan, before serving, but also returing to the pan after eating to finish them off; one by one.     Tweet I missed a couple of posts – apologies, but I’ve been quite unlucky of late with my recipe choices neither of which will feature on this site. Bad and bad – firstly a dreadful parsnip puree I had on good authority was delicious, instead was a rancid metallic nightmare. And most recently Balinese duck – which looked lovely in the book, sounded delicious. Instead, it turned out to be a pile of dry old duck meat, half a litre of duck fat, alongside a sour and greasy sauce filled with bits of whole spices to pick out of your mouth. Not good. I was beginning to doubt my cooking abilities. Until tonight. It came in the form of a delicious Spanish chicken dish. I do love garlic. Imagine the surprise when I discovered this dish contained some 16 cloves. You may think the resulting taste would be overpowering, but because of the time it cooks for it mellows considerably into a wonderful, rich sauce. It’s one of Spain’s best chicken dishes and a national treasure to boot – not to mention my cooking saviour.
