    TweetAfter just getting over the worst of a cold, I was in need of something to build up the strength and make me feel better. Good old fashioned comfort food doesn’t get much better than this Greek classic. Pastitsio is Greece’s answer to Italy’s lasagne. Rich, warm and cinnamon fragrant minced lamb and beef mixed with pasta and topped with a delicious creamy and cheesy bechamel sauce. Absolutely delicious and guaranteed to make anyone feel better. I’d bought way too much mince at the supermarket so I made double quantity and spread it over two large dishes. After cooking, I froze the rest for later use. This forethought turned out to be a life saver as the next day I received a houseful of guests on their way to the pub who all requested a feed. Still a little groggy from my cold, I instructed Brendan to heat them each a serving in the trusty microwave. Needless to say they went down a treat – and they finally left me in peace to my duvet and TV.

    TweetAfter a day in the sun I was feeling all Mediterranean. This called for something healthy and delicious – nobody does this better than the Greeks. I’d already bought a bag of super fresh prawns that morning, which I had planned on making into a delicious curry of some description, but I abandoned that in favour of one of my favourite Greek dishes, prawn saganaki. Prawns in a simple tomato sauce topped with sharp, salty feta cheese. It’s so simple to prepare and just excellent on a warm winter’s evening like we were having in Sydney. We even cracked open a bottle of retsina in celebration. Opa!

    TweetThe wintery weather was in full effect today, I was thoroughly soaked returning from the supermarket, which left me cold, annoyed and very hungry. I craved something simple, something that would cook itself with little attention from me. This Greek Stifado or stew is really easy. It’s a case of putting everything in the one pot and cooking for 2 hours. The meat is supposed to marinade first, but I didn’t have time, so just cooked it all up. The results were great, but I dare say a bit of marination would have elevated the dish to sublime. You decide.

    Tweet It’s really not that often that I cook a cake, but for some reason I had to make one today. I settled on a classic greek semolina cake as it’s my favourite kind. I hadn’t really factored in just how the 38ºC temperature outside would affect my kitchen – without air conditioning. Consequently I could barely breathe and looked rather pink and flustered. That said, I must note that this cake was delicious! As I type this, I am eyeing up the last piece alone on its plate. I am not the only one however, so I will have to make a sneaky manoeuvre to make sure I get it. Wish me luck.

Once it had defrosted I was dismayed to learn it was pork. Undeterred, I made a kind of Greek, kind of not Greek dish using some fresh fennel. It was perfect. The longer I left it to roast the more delicious it looked. It just fell apart under fork which is just perfect! Who needs lamb!

    Tweet This is a classic Greek dish which can be made with chicken, pork, rabbit or even snails! It’s also the ONLY ‘exotic’ dish my dad, who is a ridiculously plain eater, will eat – mainly due to a trip to Greece a few years back when it was a case of Stifado or starve. Anyway, this is a lovely stew that goes well with mashed potatoes or rice. This serves 6 people incidentally. This tastes even better reheated so freeze some for a later date.
