Turkish Meze – Feta & Walnut Salad

The intense, salty flavour of Feta is great when combined with walnuts. The nutty, earthy flavour mellows the cheese and the overall results are delicious. Great with lamb incidentally.

RECIPE:
90g feta cheese
2 tablespoons natural (Greek) yoghurt
1/3 cup walnuts
pepper
1 tablespoon extra virgin olive oil
1 tablespoon lemon juice
1 tablespoon fresh parsley (chopped)
1 tablespoon fresh mint (chopped)

DIRECTIONS:
Preheat oven to 200ÂșC. Spread the walnuts on a baking sheet and bake for 5 minutes. Remove then when cooled place in a small bag. Pound the nuts with a rolling pin until you have a course crumb.

Crumble the feta into a bowl, spoon over the yoghurt then tip in the nuts. Mash together with a fork then stir in the pepper, olive oil, lemon juice, parsley and mint. Leave for 30 minutes to develop in flavour.

SERVING:
Serve as part of a larger meze spread with fresh pita breads to scoop up the salad.
