Egg Fried Rice

Sometimes it’s the simple things in life that make you happy. I’ve always been a fan of plain old Chinese egg fired rice. It’s amazing how simple it can be to cook, yet even more amazing how simple it is to get completely wrong. Here’s a a fail safe version, guaranteed to warm your very soul each and every time.

INGREDIENTS:
2 tablespoons peanut oil
1 teaspoon sesame oil
2-3 cups cooked long grain rice
2 eggs (beaten)
3 tablespoons light soy sauce

DIRECTIONS:
Heat the peanut and sesame oil in a wok until just hot. Add the egg and let it sit for 30 seconds. Stir rapidly to form small bits, like scrambled eggs. Add the rice and stir continuously for 2-3 minutes until hot. Remove from the heat and stir in the soy sauce. Adjust seasoning by adding more soy if necessary.

SERVING:
I actually love this on its own, but it’s great with Chinese stir fry’s or hot pots. pretty much anything really.
