Did 2x the ingredients because there were a few of us with steamed veggies. Absolutely delicious. So full.

ps. you missed bay leaves in the ingredients list. Not a biggie, always have some on hand.</description>

I made them again a couple of nights ago but this time also didn&#039;t have any sherry. I used a splash of brandy which added a different taste altogether... Not a wholly pleasant one either. Sherry (or a derivative of) is definitely the way to go...</description>

Just wanted to let you know how AMAZINGLY GOOD those Albondigas are! I didn&#039;t have any alcool in the house when I made them so I replaced the fino sherry by 2 tablespoons of red wine vinegar with sugar (to &quot;cut&quot; the acidity). It turned out super well! It gives them a little je-ne-sais-quoi that make you want to eat more and more. So thank you for that great receipe and for all the others!
