Spaghetti with Chorizo and Prawns

This is a delicious pasta sauce. Seriously delicious and seriously easy! I just love the smoky taste of paprika and I am properly addicted to chorizo. Those Spaniards!

RECIPE:

INGREDIENTS:
2 tablespoons olive oil
1 chorizo (diced)
180g raw prawn meat (roughly chopped)
1 small onion (finely diced)
2 cloves garlic (finely chopped)
400g can tomatoes (blended)
1 teaspoon smoked paprika
1/2 teaspoon dried oregano
1/2 cup white wine
salt & pepper

DIRECTIONS:
Heat a large pan with the oil over a medium heat. Fry the onion, garlic with a little salt & pepper for 5-7 minutes until soft and brown. Add the chorizo and fry for 3 minutes then add the paprika and oregano. Turn up the heat then add the wine and sizzle for 30 seconds. Pour in the the tomato together with 250ml water. Bring to a boil then reduce the heat and simmer gently for 15 minutes. Add the chopped prawns and simmer for 5 minutes before serving.

As the sauce simmers cook enough spaghetti for 2 people according to the packet instructions (remember to have a large pan FULL of water). Drain then return to the pan. Quickly tip in all the sauce and stir into the pasta.

SERVING:
Serve in large bowls! I also like to fry some fresh bread crumbs until brown then drain and sprinkle over the pasta for a lovely crunchy finish. It’s delicious!
