Italian Smashed Potatoes

A delicious little side dish that is almost too simple! I often get carried away with trying to make my sides too flamboyant so it’s good to get back to hearty basics with this brilliant smashed potato dish. So as to avoid anyone accusing you of having lumpy mash, this dish is supposed to have a bit of texture. It’s fantastic!

RECIPE:

INGREDIENTS:
750g waxy potatoes
3/4 cup parmesan cheese (finely grated)
salt & pepper
1/3 cup extra virgin olive oil

DIRECTIONS:
Fill a large pan with water and bring to a rolling boil. Cut the potatoes into big chunks and cook them until tender. Reserve a cup of the liquid then drain. Roughly mash the potatoes being careful not to make them too smooth. Stir in the olive oil and season well with salt & pepper. Serve hot!

SERVING:
Serve with anything you like. I love them with Italian herb sausages in tomato sauce or some kind of stew – maybe my lovely slow cooked lamb shanks.
