thought I’d try something a little different with meatballs tonight. I had some rocket lying around and some pinenuts. Hello, I thought, I’ll make some rocket meatballs. It all felt a bit like Ready Steady Cook.
RECIPE:
INGREDIENTS:
Meatballs:
250g veal mince
250g pork mince
1/2 medium onion (grated)
1/2 cup breadcrumbs
3 tablespoons pinenuts (toasted)
1 egg
salt & pepper
3 tablespoons fresh rocket (finely chopped)
1 tablespoon fresh flat leaf parsley (finely chopped)
1 garlic clove (mashed)
pinch nutmeg
Sauce:
3 tablespoons olive oil
1 1/2 onions (chopped)
1x400g can tomatoes
1 tablespoon tomato puree
salt & pepper
2 cloves garlic (mashed)
1 teaspoon sugar (optional)
