Mediterranean Salad

I’m not one for a regular salad it’s true, but once in a while I really do surprise myself. This salad was pretty damn tasty. There were so many delicious flavours it was hard to keep up. ENJOY!!

RECIPE:

INGREDIENTS:
1/2 large iceberg lettuce (roughly chopped)
3 plum tomatoes (thickly sliced)
1/2 red onion (thinly sliced)
1-2 pickled gherkins (sliced)
1 roasted red capsicum (chopped)
12 kalamata olives (pitted)
250g greek feta cheese (crumbled)
1/4 preserved lemon rind (finely chopped)
2 teaspoons dried oregano
2 tablespoons fresh continental parsley (chopped)
salt & pepper
1/4 cup pine nuts (dry roasted in a frying pan)

DRESSING:
1/4 cup extra virgin olive oil
2 tablespoons freshly squeezed lemon juice
1/2 teaspoon sugar
1 tablespoon white wine vinegar
1 garlic clove (crushed)
1 tablespoon dried oregano
salt & pepper

DIRECTIONS:
To prepare the salad, combine all the ingredients (except the pine nuts) and toss well.
To prepare the dressing, combine all the dressing ingredients, and with a hand blender, blend into a creamy consistency. Pour over 4-5 tablespoons of dressing and toss into the salad, sprinkle over the pine nuts and serve.

SERVING:
We ate this salad with some new potatoes mixed with fresh mint, and some grilled lamb chops marinated Greek style.
